POSITION OBJECTIVE: Performs a variety of culinary duties associated with the preparation, presentation and service of cold food items such as salads, sandwiches and desserts. Responsible for prepping food items on the menu cycle, special meals and catering. Organizing and thawing foods to be prepared. Responsible for maintaining the pizza station in strict accordance with Dining Services’ procedures and standards. Responsible for training and supervising student staff in prep and production techniques, along with maintaining sanitary kitchen workstations.
RESPONSIBILITIES:
*preps food according to production sheets and recipes
- cuts vegetables, meats and cheeses, pans up food as needed, cooks off items as needed, labels and date all prepped food
*Verifies and pulls frozen items from freezer according to pull list.
* Communicates, in writing, on production sheets, what prep was prepped and where it is located
* Press 12-14 trays of pizza dough daily.
*Assemble pizza according to production sheet.
*Cook pizza and maintain pizza bar
*Ensures that the pizza prep is completed for the subsequent day.
*Clean pizza prep area
* Responsible for training student pizza making and prep staff.
* Prepares a variety of desserts such as cakes, pies, and cookies as directed by the production sheet.
* Bakes desserts as needed.
* Produces box meals in accordance with managerial instruction and/or direction.
* Prepares foods for the salad bar, specialty bars, deli line, and yogurt bar. Prepares all cold foods.

* Maintains record of the amount of freshly prepared food and leftover food.
* Fills in for cook on occasion as needed or directed by manager.
* Works with Production Manager to ensure product is ready for production.
* Insures timely and a satisfactory quality and quantity of food is produced and presented.
* Follows proper sanitation and safety regulations.
* Ensures proper utilization of leftover food.
* Responsible for maintaining proper food temperatures of both hot and cold foods (hot above 140°F and cold foods below 40°F), taking corrective action as necessary. Keeps accurate food temperature charts, reporting problems to supervisors.
* Adheres to standards outlined by sanitation program (ServSafe).
* Performs other job-related duties as assigned or directed.
* Works with, trains and directs student staff assigned to assist the position.
* Works catered events and special functions as needed.
