Performance Chef - Player Development

Position Summary:
The Head Performance Chef of Player Development will play a key role in optimizing player performance, development, and health by delivering best in class food and nutrition services to the athletes and staff of the San Francisco Giants. Reporting to the Director of Performance Nutrition, the Head Performance Chef will be an integral part of the San Francisco Giants Performance Nutrition Department, collaborating closely with the culinary teams across the organization to ensure alignment with nutritional and performance goals. The primary responsibility of the Head Performance Chef is to lead and oversee the culinary team at the San Francisco Giants Papago Park Complex, ensuring that meals are fresh, locally sourced, sustainable, and nutrient-dense with a focus of made in house. In collaboration with the Performance Dietitians and other Performance Chefs, the Head Performance Chef will contribute culinary creativity to develop menus that support players' performance, recovery, and injury prevention. This role emphasizes the integration of chef expertise and dietitian input to craft meals and beverages that meet the nutritional needs of the athletes year-round.
Position Responsibilities:
Food Service
● Ensure proper health and performance of all San Francisco Giants players, coaches, training staff, and clubhouse employees.
● Provide food/beverages of the highest nutritional value possible at all times.
● Order and provide locally sourced and highest quality food within the annual budget.
● Experience in scratch cooking and creating standardized recipes to include minimal processed foods; set the standard for culinary excellence.
● Maintaining all nutritional guidelines established by the Performance Nutrition Department for the team, and associated staff.
● Collaborate with the Performance Dietitians and culinary team to create nutrient analysis of recipes and standardized recipes.
● The ability to execute meal preparation specific to dietary needs as guided by the Performance Dietitian and other medical staff.
● Menu development and expansion to authentically accommodate numerous ethnicities of cuisine.
● Continue to develop future advances in team performance with performance dining.
● Must be willing to learn new techniques and safe food practices.
● Have knowledge of proper kitchen procedures.
● Performing educational demos for players such as knife skills, food selection, cooking demos etc.
Administrative Duties
● Submitting at minimum bi-monthly expense reports
● Creating and sharing menus with the Performance Dietitians prior to execution of the menus with enough time to allow for review and making adjustments.
● Routine maintenance of equipment.
● Maintain organization and cleanliness of working space and storage areas.
● Extensive budget management including the management of annual season, off-season and camp food and beverage budget.
● Establishing productive vendor relationships including finding local suppliers, farmers markets when feasible.
● Be visible and present during mealtimes to interact with athletes, and staff.
● Overseeing all routine kitchen management procedures including (but not limited to) opening and closing checklists, cleaning schedules, temperature checks, waste sheets and pest control.
Staff Management
● The Head Performance Chef will manage all kitchen personnel.
● In conjunction with the Performance Dietitians, hiring supporting kitchen staff.
● Creating kitchen staff schedules for proper management of labor hours.
● Delivery of pre-shift meetings within team to set expectations and tone for the day.
● Ensure all tasks are performed efficiently and within food safety guidelines.
● Provide a professional and positive work environment.
● Stay up to date on current performance based culinary trends and provide continued internal development of culinary staff.
● Holds staff accountable for the highest standards of service, food production, and professionalism
● Keep a professional relationship with staff and players.
● Performs other duties as assigned.
Skills and Qualifications:
● Minimum of 2+ years’ experience as a chef. 1+ years’ experience as an Executive/Head Chef preferred. Experience working with collegiate or professional sports teams is preferred.
● Graduate of a culinary institute or comparable background/education. Dietetic background a plus.
● Experience working with dietitian a plus.
● Previous Management Experience of staff and budgets.
● Knowledgeable in culinary terms, knife skills and safe food handling.
● Understands and complies with food safety and temperature standards.
● Food Service Manager’s certification required according to local and state law.
● Must be flexible to work non-traditional hours including nights, weekends and holidays.
● Ability to handle confidential matters and information with discretion and diplomacy.
● Excellent communication skills, both written and verbal.
● Must be able to stand for long periods of time.
● Must be able to lift up to 25+ lbs.
