The group owns two MICHELIN starred restaurants: Arbor (Two Stars) combines seasonal Japanese produce and refined Nordic sensibilities to create innovative Nordic-Japanese cuisine, while ÉPURE (One Star) channels seasonal ingredients from France into elegant, contemporary French cuisine. Ami and Wood Ear are the group’s latest project, presenting an elevated “fine bistronomie" experience, where guests can enjoy great food with a fine dining touch as well as rare whiskies in a relaxing and friendly atmosphere. The group also introduced the legendary DALLOYAU brand from Paris to Hong Kong, running five retail shops and restaurants in the city’s most premium locations.

The incumbent will assist the Chef de Cuisine in managing day-to-day food production and operations of a specified kitchen section. He /she will also have to monitor the standard of food quality and quantity as well as overseeing the hygiene and security standards.

Requirements:
Higher Diploma or with equivalent vocational training certificate.

Certificate in recognized food handling / sanitation institution is preferred

Minimum 6 years of culinary experience in western luxury hotels and/or fine dining restaurants with 2 years in supervisory level

Well-versed in kitchen hygiene, creative and service-oriented

A good team player with good communication and supervisory skills

Good spoken English & Cantonese

Candidates with less experience will be considered for the post of Junior Sous Chef (Michelin Star Restaurant).
