Department Purpose
The purpose of the UC Laboratory for Research in Food Preservation is to provide consultation to the State of California to ensure the microbiological safety of foods produced and processed in accordance wit the State’s botulism control program including the pH control regulation.
Job Summary
Under supervision responsible for independently conducting analytical procedures used in the evaluation of food samples submitted to determine compliance with the State program; maintaining accurate logbooks, inventory forms and calibration records; and communicating with state inspectors, if required. Provide liaison between the State and the industry on compliance with the program. Ensure tests are conducted according to prescribed procedures as set forth in guidance and regulatory documents by the State. Responsible for conducting about 10,000 analyses annually and assisting with evaluating about 1,200 new products annually
