Position Description

The Culinary Services department at Cold Spring Harbor Laboratory is seeking a Chef to execute the planning and cooking responsibilities to support the general dining, Meetings & Courses, and Event needs.

Position Responsibilities

Coordinate cook staff to ensure all staff has daily instructions
Stand in for the Kitchen Manager during absence
Provide job performance feedback on cook staff to the kitchen manager
Assist in purchasing, production, and labor scheduling.
Contribute to menu development for all locations
Contribute to maintaining recipes computer database. Ensure that menu recipes and procedures are followed.
Oversee all perishable food purchasing, storage, and product rotation to insure freshness
Contribute to planning, directing, and executing general dining, meetings, courses, Genome center, Hillside Café, and events services.
Provides support to the Manager by ensuring that the administrative and operational policies and procedures of the department and the Laboratory are followed.
Interact in a courteous manner with clientele, fellow employees, and other supervisors
Perform and oversee secure close up of work area/facility at the end of a shift/workday

Position Requirements

EDUCATION: Bachelor’s Degree in Hospitality Services and two years of culinary school.
EXPERIENCE: Ten years cooking experience in restaurant, catering facility and/or hotel.
SKILLS:

Principles and practice of supervision.
Work scheduling.
Menu planning and development.
Hot food usage, preparation, cooking and storage.
Proper sanitation procedures.
Ability to troubleshoot kitchen equipment and perform minor repairs.
Organization skills.
Diplomacy and tact.
Telephone etiquette.

OTHER: Ability to speak and understand the Spanish language is helpful. Ability to work evenings, weekends and holidays as required. Current Nassau County sanitation class documentation.
