Exciting opportunity to join Oahu's first Forbes 5-star luxury hotel! Trump International Hotel Waikiki has an immediate opening for the position of Executive Sous Chef – Full Time.
Position Overview:
Responsible for supporting the Executive Chef in managing the daily operations of the kitchen. Responsible for the planning and managing of preparation, production and presentation of food items in accordance with Hotel standards. Manages and trains all kitchen staff to prepare, cook and present food according to Hotel recipes. Support Executive Chef in menu development for all outlets and work with catering managers ensuring all catering revenue is profitable.
Qualifications and Specific Requirements:
Minimum two (2) years Sous Chef experience required; Pacific rim cuisine background, hospitality or fine dining experience preferred. Good verbal and written communication skills required. Mathematic skills and budgetary analysis capabilities required. Must possess basic computer skills and knowledge of Microsoft Office programs. Must be able to provide a TB Clearance Test and Food Handling/Safety Certification.
Physical Requirements:
Prolonged standing (up to 8 hours); frequent walking and sitting. Lifting, pushing/pulling up to 50lbs., must be able to push and pull carts and equipment weighing up to 250 lbs. on a regular and continuing basis, with or without assistance. Must have the ability to bend, stoop, stretch, squat, kneel, twist, climb, reach, and grasp. Reaching overhead – occasionally extending the arms/hands above the head in any direction. Must have appropriate vision, hearing and oral communication skills needed to perform daily tasks. Requires manual dexterity to operate all necessary equipment. Must be able to access all public and private areas of the property, including stairwells, elevators, all maintenance and equipment areas/rooms, guest rooms, etc. The noise level in the work environment is generally moderate and occasionally loud. Temperature is moderate however, must be able to work in extreme temperatures like freezers (-10°F) and kitchens (+110°F), possibly for one hour or more.
