One hot summer day in 2006, Andy and Charlie Nelson were driving with their dad to a butcher shop in Greenbrier, TN, when they noticed a historic marker for Nelson’s Greenbrier Distillery. The brothers had heard the family lore about a whiskey business (think sunken ships, lost gold, Tennessee’s oldest whiskey and a woman-run distillery before women could vote), but nobody knew the real story. They asked the butcher if he’d ever heard of the distillery. He pointed right across the street and then introduced them to the town’s historian who showed them two original bottles of Nelson’s Green Brier Tennessee Whiskey. At that moment, Charlie and Andy knew: “This is our destiny.”
After years of research, planning, and hearing “no” an awful lot, Charlie and Andy Nelson decided to make the leap on their own and craft a whiskey to bring back the business started by their triple great grandfather. In 2012, the Nelson’s resurrected Belle Meade Bourbon and attracted the attention of Constellation Brands, which took a minority stake in the distillery in 2016 and a majority stake three years later. Nelson’s Green Brier came full circle in the fall of 2019 when they reintroduced their family’s renowned Tennessee Whiskey after a 100-year absence.
The entire Nelson team is thrilled to grow the business once again with the opening of a restaurant and bar to reflect the rich history and quality that NGBD is known for and solidify its spot as a leading hospitality destination in Nashville.
Position Summary
We are looking for a professional Pastry Chef to help us open our new restaurant at Nelson’s Green Brier Distillery. The pastry chef will work closely with the Executive Chef to ensure that pastries and baked goods complement and enhance main dishes and are created to the specifications shared by the Executive Chef. The successful candidate will employ their culinary and managerial skills to maintain and enhance our guests’ satisfaction. This individual will play a vital role on the culinary leadership team. Responsibilities
Help in the preparation and design of all pastry & baked goods related to food menus
Assist Chef in daily tasks such as ordering product, organizing storage areas and assigning cleaning projects
Properly label and date all products to ensure safekeeping and sanitation
Review and expedite computer tickets for service. Create production list to ensure efficient execution of service
Work as key part of a team and effectively communicate with sous chefs, executive chef and FOH management to fulfill and address all requests or issues impact service or guest experience
Chiefly responsible for all bakery and pastry related items both in quality and finished product/presentation
Ensure that the kitchen operates in a timely manner that meets our quality standards. Able to jump in and contribute to all kitchen related activities.
Collaborate with Executive Chef in planning and directing food preparation when necessary
Resourcefully solve any issues that arise and help lead team through any problematic situations
Manage and train related staff, establishing work schedules and department timetables
Order supplies to stock inventory appropriately
Comply with and maintain sanitation regulations and safety standards
Produce and maintain core recipe book both physical and electronic with specified guidelines of Executive Chef
Maintain a positive and professional approach with coworkers and customers
Skills
Proven experience as a Pastry Chef
Understanding of various cooking methods, ingredients, equipment and procedures related to baking and pastry production
Strong record of kitchen and staff management
Accuracy and speed in handling emergency situations and providing solutions
Familiar with industry’s best practices
Minimum Qualifications
Acquire and maintain a serv-safe permit within 14 days of onboarding
Ability to communicate clearly and effectively
Have or obtain any certifications or permits required for handling or serving food and alcohol in Davidson County
Able to work evenings, weekends, and holidays as needed (must have flexible schedule)
Exceptional hygiene and grooming habits
Ability to read, understand and share aloud basic cooking directions
Preferred Qualifications
BS degree in Culinary science or related certificate would be a plus

Works in high places
Works on wet surfaces
Be able to reach, bend, stoop and frequently lift up to 50 pounds.
Be able to work in a standing position for long periods of time.

$19.61 - $30.68This is the lowest to highest salary we in good faith believe we would pay for this role at the time of this posting. We may ultimately pay more or less than the posted range, and the range may be modified in the future. An employee’s pay position within the salary range will be based on several factors including, but limited to, the prevailing minimum wage for the location, relevant education, qualifications, certifications, experience, skills, seniority, geographic location, performance, shift, travel requirements, sales or revenue-based metrics, any collective bargaining agreements, and business or organizational needs.
