Job Description
The Associate Director of Retail Operations will have responsibility to control costs, revenues, concept ideation, marketing, training and all other facets of operations in 22 retail outlets with an operating budget of approximately $12M.

The Associate Director will be expected to engage with building stakeholders and the Executive Chef to create menus that are relevant to customers of our retail outlets. Further, the Associate Director must work closely with Centralized Services to ensure appropriate product is purchased, warehoused, and stored and arrange purchasing/delivery logistics with the Associate Director of Centralized Services.

The Associate Director of Retail Operations will be expected to provide, explain, and provide resources to support hitting quality and financial targets in each café.

Qualifications
  • Degree in Hotel/Restaurant Management or related field and 5+ years of related experience. Experience in a high volume multi-unit operation.
  • Must be able to teach and motivate supervisory staff, bargaining unit employees, student management, student employees, and temporary staff, to provide safe, nutritious meals for student customers, all while keeping NYS sanitation standards.

Job Specific Qualifications
  • Understanding of Food Services information technology and POS systems preferred.
  • Experience leading and developing teams.

Responsibilities
  • Manage the operational activities of all retail outlets which currently include two food courts and 10 cafes and 3 convenience stores generating annual revenue of ~$12M. Ensure compliance with budget, quality guidelines, safety.
  • Work with the Executive chef to develop appropriate menus, direct food purchases, monitor inventory, forecast future purchases and sales.
  • Develop new and exciting menu themes and concepts, engage student customers, monitor, and maintain budgetary goals.
  • Develop budget recommendations, maintain records, review, and adjust labor and food costs to achieve departmental goals.
  • Process receivables and authorize expenditures. Review and approve payroll.
  • Train employees to be successful at providing excellent service and end-products. Ensure training in customer service, awareness of food allergies, cross contact, proper food handling and cooking techniques.
  • Identify efficiencies and cost control measures to improve bottom line results.
  • Meet individually and as a team with management members to define operational goals and objectives.
  • Pro-actively provide recommendations on future enhancements to the program.
