About the opportunity

Working at one of Sydney’s most prestigious performing arts centres, the Bar Manager (Theatre) – Seymour Centre, will ensure the successful management of the Centre’s food and beverage outlets (Coffee Cart and Everest Bar) including providing the highest standard of customer service, management of supplier relationships, oversight of food & beverage profit and loss, oversight of food and beverage offerings and pricing, and staff management and training. To perform successfully in this role, the individual will need to efficiently manage Food & Beverage staff, manage the hiring and rostering process, keep up to date with the administration and work effectively with the Operations Management team.

Your key responsibilities will be to:

  • effective management of the day to day running of food and beverage operations within the Seymour Centre, including negotiation of favourable supplier rates
  • manage food and beverage stock levels, ensure stock is rotated and maintain records
  • collaborate with the Front of House manager in the management of catered events, conferences and opening nights as needed
  • ensure appropriate staffing levels are met for each event, and that rosters are up to date
  • implement appropriate people management practices to meet operational requirements
  • ensure all staff are well trained in the appropriate standards and procedures and that these standards are consistently met
  • maintain records of daily takings, undertake regular banking and reconciliation
  • manage purchase orders and process supplier invoices
  • manage the overall profit and loss of the food & beverage operations, ensuring efficiencies in rostering, pricing and ordering to maintain viability
  • work with the Operations Manager to regularly review food and beverage offerings and prices to ensure the Centre is up to date with its competitors within the Sydney arts environment
  • work with the Operations Manager to monitor ongoing maintenance of all equipment
  • ensure all clients events adhere to the Centre’s WHS requirements
  • ensure Seymour Centre Food and Beverage operations comply with all relevant regulation including License Requirements, NSW food safety regulations and the Seymour Centre local alcohol management plan.

Given the dynamic nature of events, this role requires flexibility in the ability to work evenings and weekends

About you

  • experience in managing food & beverage outlets/bars/cafes preferably those associated with live performance and/or events (or equivalent)
  • proven ability to supervise, develop, motivate and provide leadership to staff and work effectively as part of a team
  • well-developed verbal communication skills with the ability to liaise successfully with a diverse client and patron base, while providing a high level of customer service
  • has a valid Responsible Service of Alcohol (RSA)
  • first aid certificate (desirable)
